My neighbor had a barrel of apples given to her from a friend’s orchard. In exchange for using my dog to “hunt and kill” a garter snake roaming through her shoes in her closet–I got 10 pounds of gorgeous, organic apples. Not only are we slicing up for snacks, tossing ’em into salads, I thought I would make apple muffins and bread.

A perfect recipe with the flavors of fall
Ingredients
- 3 cups all purpose unbleached organic flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- 1 tablespoon vanilla extract
- 1 teaspoon apple spice* see notes
- 1 cup olive oil or 3/4 apple sauce
- 3/4 cup honey
- 1/4 cup brown sugar
- 3 eggs, beaten (or flax seed eggs)
- 2 cups peeled and diced apples
Instructions
- Preheat oven to 325 degrees and spray 8 x 4 pan or muffin pans with olive oil.
- Sift together dry ingredients: flour, baking powder, baking soda, salt, spices.
- In a large bowl blend together eggs, oil (or applesauce), honey, vanilla, sugar.
- Gradually add dry ingredients until blended.
- Fold in diced apples.
- Pour into pans - for muffins fill tin 3/4 full.
- Bake loaf for 40 to 50 minutes or until tooth pick comes out clean.
- Bake muffins for 20 to 25 minutes or until tooth pick comes out clean.
Apple Pie Spice Recipe
- 4 tablespoons ground cinnamon
- 1 tablespoon all spice
- 2 teaspoons nutmeg
- 1 & 1/2 teaspoon ground ginger
- Mix spices together and store in air tight container.
