This one is simple to create,  saving you time in the kitchen. The best part is you can make a double or triple batch of this recipe and freeze the extra portions. When you need a savory meal in a pinch, simple toss the frozen batch into your crockpot.

Sweet Potatoe Stew Crock Pot Style

Ingredients
  1. 4 medium Yukon Gold potatoes, peeled and cubed
  2. 4 medium sweet potatoes, peeled and cubed
  3. 4 medium carrots, peeled and cut into 1⁄2-inch slices
  4. 1 can black beans
  5. 2 cloves minced garlic
  6. 1 medium onion
  7. 2 can (15 ounces) whole stewed tomatoes
  8. 2 teaspoon salt
  9. 2 teaspoon paprika
  10. 2 teaspoon celery seeds
  11. 1 teaspoon freshly ground black pepper
  12. 1⁄2 teaspoon ground cinnamon
  13. 1⁄2 teaspoon ground nutmeg
  14. 1⁄4 cup fresh basil, chopped
  15. 2 cups vegetable broth
  16. 3 cups water
Instructions
  1. Toss all ingredients into crock pot. Cook on low for 6 to 8 hours. If you want more flavor, saute onions and garlic before adding ingredants to crock pot.
To Freeze
  1. Combine ingredients, minus broth, add to Ziploc bag. Freeze.
  2. Toss frozen soup into crock pot. Add broth and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
