Sweet Potatoe Stew Crock Pot Style

Serves 6
Ingredients
- 4 medium Yukon Gold potatoes, peeled and cubed
- 4 medium sweet potatoes, peeled and cubed
- 4 medium carrots, peeled and cut into 1⁄2-inch slices
- 1 can black beans
- 2 cloves minced garlic
- 1 medium onion
- 2 can (15 ounces) whole stewed tomatoes
- 2 teaspoon salt
- 2 teaspoon paprika
- 2 teaspoon celery seeds
- 1 teaspoon freshly ground black pepper
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon ground nutmeg
- 1⁄4 cup fresh basil, chopped
- 2 cups vegetable broth
- 3 cups water
Instructions
- Toss all ingredients into crock pot. Cook on low for 6 to 8 hours. If you want more flavor, saute onions and garlic before adding ingredants to crock pot.
To Freeze
- Combine ingredients, minus broth, add to Ziploc bag. Freeze.
- Toss frozen soup into crock pot. Add broth and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
